1 T. olive oil
1 t. butter
1 medium onion, chopped
1 clove garlic, chopped
4-6 c. chicken broth
1/2 c. parmesan cheese
1/2 c. ditalini or 1 can drained canalloni beans

Directions:
Directions:
Saute onion and garlic. Add washed and chopped escarole. Saute till wilted. Add broth, pasta or beans, cheese. Simmer till escarole is cooked.

Aunt Sadie lived with Grandma and Grandpa Saglibene. She never married - the story is Uncle Horace (her brother and Aunt Cay's father, chased all her suitors away) and spent her life taking care of three generations of Saglibene offspring, helping in the store on York St., and cooking delicious meals. She was a very smart lady.
