1 tbsp. butter, softened
2 tbsp. sugar
3 tbsp. flour
1/4 tsp. cinnamon
1 3/4 c. flour
1 c. sugar
2 1/2 tsp. baking powder
1/4 tsp. salt
2/3 c. milk
1/3 c. vegetable oil
1 egg
1 c. fresh or frozen blueberries
2 1/2 tsp. lemon zest

Preheat oven to 375. For streusel, combine butter and sugar and mix until well blended. Add flour and cinnamon; mix until crumbly. Set aside. For cake, combine flour, sugar, baking powder and salt. Add milk, oil, and egg mixing just until dry ingredients are moistened. Gently stir in blueberries and lemon zest. Pour into greased 9" square cake pan. Sprinkle evenly with streusel. Bake 30 to 35 minutes or until a toothpick inserted into center comes out clean.
