Apricot Lattice Coffee Cake

Dough:
½ C Milk
1 pkg. Dry yeast
6 T Butter
3 T Sugar
½ t Salt
2 Eggs
2 C Sifted all purpose flour

Filling:
½ C Apricot or peach preserves
¼ C Butter
¼ C sugar
2 T Flour
1 T Water
Almonds

Directions:

Preparation:

1. Heat milk, add yeast, 6 T butter, 3 T sugar and salt. Add one egg and 1 egg yolk. Reserve white. Beat well.
2. By hand, stir 2 C flour and yeast milk mixture. Do not over beat.
3. Set aside ½ of the dough. Pour the remaining ½ into a greased and floured square pan.
4. Filling: Combine preserves, ¼ C butter, ¼ C sugar and almonds.
5. Spoon over dough in pan.
6. Stir 2 T flour into the reserve dough and roll out and make lattice topping. Lay out lattice dough diagonally across the top of filling in pan and brush with reserved egg white. Allow cake to rise until double in bulk.
7. Bake at 375F (preheated oven) for 25 to 30 minutes.
