Breakfast Banana Nut Bread


Ingredients:

½ C Butter
1 C Brown sugar
2 Eggs
2 C Oatmeal (uncooked)
6-8 Ripe bananas (about 3 C)
2 t Vanilla extract
2 C Flour (white or whole wheat or a mixture of both)
1 Box “Jiffy” apple/cinnamon muffin mix
4 t Baking powder
1 t Baking soda
1 C Chopped nuts (optional)

Preparation:

1. Cream butter and sugar until light.
2. Add egg and mix well.
3. Add cereal, banana and vanilla. Stir.
4. Combine remaining ingredients in a bowl and add the first mixture , stirring only long enough to moisten flour.
5. Grease or oil two loaf pans and then flour, pour in batter.
6. Bake at 350F for an hour or until bread tested is done.

* To make super moist, add 2 jars of banana baby food or vanilla or banana pudding mix. Also sprinkle wheat germ in batter as much as you like to add something else good in. Try different things.
