Corn Bread Loaf


Ingredients:

6 T Butter or margarine
1 T Chopped green onions
¾ C Chopped celery
4 C Corn bread crumbs
4 C Fine plain bread crumbs
10 Slices of bacon, cooked and crumbled
1 ½ t Ground sage
¾ t Salt
½ t Ground black pepper
6 Eggs, beaten
1 C Chicken broth

Preparation:

1. Preheat oven to 350F.
2. In a large skillet, melt butter over medium high heat. Stir in onions and celery and sauté 8 minutes or until tender.
3. In a large bowl, combine corn bread crumbs and breadcrumbs.
4. Stir in onion mixture and next four ingredients.
5. Stir in eggs and chicken broth.
6. Spoon evenly into greased and floured 4 X 12 inch loaf pan.
7. Bake 30 to 40 minutes or until top is brown.
8. Unmold onto serving plate and slice.
9. Serve immediately. Yield about 10 servings.
