Barbara’s Potato Bake


Ingredients:

3 Medium potatoes, peeled and cut into small wedges
1 Small bunch of fresh broccoli, cut into flowerets
1 White onion, sliced
Water and salt

Topping:
¾ C Mayonnaise
¼ C Tomato ketchup
½ C Half and half
1 T Mustard
½ C Cheddar cheese
2 T Parmesan cheese

Preparation:

1. Place potatoes on a large saucepan. Cover with water. Add a little salt.
2. Bring to a boil and simmer for about 12 minutes.
3. Add broccoli flowerets and sliced onion.
4. Simmer for another 8 minutes until vegetables are tender, but not mushy.
5. Drain well. Reserve cooking liquid for soup or sauce, if desired.
6. Place potato mixture in a lightly greased shallow baking dish.
7. Prepare topping: Combine mayonnaise, tomato ketchup, half-and-half and mustard. Spread evenly over top of vegetables.
8. Sprinkle with cheeses.
9. Bake at 375F to 400F until hot and the cheeses are melted.
