Chicken Pot Pie



Ingredients:

2 (9 or 10-inch) Unbaked pie shell
¼ C Butter
¼ C Flour
2 C Chicken broth
3 ½ C Boneless chicken cooked and cubed
1 pkg. Frozen peas and carrots
1 pkg. Frozen corn optional
Salt and pepper to taste
¾ C Light cream or milk

Preparation:

1. In a large pot, melt butter, add flour and cook (bubble three minutes) on low heat.
2. Warm milk in microwave.
3. Stir in milk and broth to butter-flour mixture and cook until it boils and thickens.
4. Add remaining ingredients and let simmer for 10 minutes.
5. Fill pie shell with sauce and cover with other shell. Seal together.
6. Put several steam vents (slits) in top crust.
7. Brush top with beaten egg if desired – It gives crust a good flavor and makes it look nice.
8. Bake in oven at 400F, 45-50 minutes until golden brown.
9. Serve hot.
