1 package fresh spinach
1/4 cup seasoned bread crumbs
4 oz. feta cheese
6 flounder fillets
1/4 tsp. salt
1/4 tsp. pepper
1 tbsp. butter, cut into small pieces

Directions:
Directions:
Preheat oven to 350º

1) Microwave spinach on high, covered, for 4 minutes. Cool, chop, and squeeze dry.
2) Mix the spinach, bread crumbs, and feta cheese.
3) On wax paper, lay out the flounder and season with salt and pepper. Place the spinach mixture in the center of each fillet. Roll each fillet up.
4) Place fillets seam side down in a greased baking dish.
5) Top each fillet with small pieces of butter. Cover dish with foil and bake for 25 minutes, or until cooked through.
6) Garnish with chopped fresh chives or parsley and serve immediately.
