Sicilian Style Broccoli Recipe

1 bunch of broccoli, washed and cut into small stems with florets
3 cloves minced garlic
2 T butter
2 T olive oil
1/4 cup Parmesan or Romano cheese (freshly grated is better; or buy in a bag in the dairy section.)
1/4 cup Italian breadcrumbs
salt and pepper to taste

Wash broccoli and cut into thin florets, making sure you remove all tough stems. Drain the broccoli leaving it somewhat wet. In a deep skillet or saute pan with a lid, heat the butter and oil and add the garlic, being careful not to burn it. Add the broccoli, a little salt and pepper, and saute for a few minutes over medium-high heat, stirring often to prevent burning. Cover pan and simmer for a few minutes, then stir and check for tenderness. It cooks very quickly. When it is almost done sprinkle the cheese and bread crumbs on top, turn up the stove to high for just about 30-45 seconds, then turn off the stove. Be careful not to overcook. Add a little olive oil or a few drops of water if broccoli sticks to the pan or get too dry.

You can use frozen broccoli. This also works well with spinach, but spinach shrinks.You may need to cook at least two bags or bunches of fresh spinach for four or more servings.
