¼ cup butter
1 small onion chopped
1 cup sliced fresh mushrooms or 1 4oz can drained mushrooms
2 cups chicken broth
1 cup washed uncooked rice
1 green pepper cut in thin strips
½ cup diced celery
2 cups cooked chicken – cut up
¼ cup milk or cream
Salt and pepper to taste

Melt butter in heavy skillet. Add onions and mushrooms. Cook until golden. Pour in chicken broth and heat to boiling. Stir in rice. Cover and simmer gently for 10 minutes. Add remaining ingredients. Cover and cook 10 – 15 minutes more. Makes 6 servings
