My Mom, Leona Holland was the greatest cook of all time. She could cook anything and make it taste great, however I loved the simple foods that she made. Such as her Pinto Beans, Fried Taters, Corn Bread and Hamburgers with Onions. I also loved her Mustard Greens Salad and Fried Pies. Many times Pinto beans, Fried Taters and Corn Bread was our total dinner. Not only because we were poor folks, but because of a meat shortage during world war II. That is another story though, that will save for another time. Dad would sometimes kill a rabbit and bring it home for Mom to cook and that would be our meat.

I remember when I was in the 8th grade I would pretend to be sick so I could stay home and be with Mom. Because she would fry Hamburgers and Onions, then put the buns in the skillet with the grease and toast two half's. Mmmm so good!!!
For her Mustard Greens Salad she would fry Bacon very crisp and combine it with chopped Mustard Greens and Onions in a bowl. Then pour hot Bacon Grease over all of it. It tasted great with sandwiches or any other type of food for lunch. Mom also made Egg Custard Pies with Meringue topping. Chess Pies and Chocolate Pies. I loved her Pies, she always made them for me and were Mmmmm good.
Mom cooked without measurements just a little of this and a handful of that and mix it up. Guess maybe that could be a sign of a Great Cook.

Although we were a poor family Mom made sure we always had plenty of food to eat. I consider that our family was very Rich in FAMILY VALUES and LOVE for each other.
