Sweet Potatoes (approx 1/2 per serving)
Olive Oil
Salt & Pepper to taste
Optional - Rosemary, Garlic, Thyme, or Crushed Red Pepper

Directions:
Directions:
Preheat oven to 400
Slice sweet potatoes into French fry shapes (I keep the skin on)
Toss with oil in a bowl – use the smallest amount of oil possible to coat all fries
Add and toss spices: my favorites are rosemary (fresh is best!) and garlic; red pepper is nice too
Arrange on a cookie sheet so fries do not overlap
Bake until crisp – about 30 minutes though it varies according to size of fries and moisture in the sweet potatoes. They will get soft first and then crisp up. It’s OK if some edges are burned.
Turn out on paper towels, serve when hot with your choice: ketchup, Dijon mustard, BBQ sauce.

Good for those days when you think you can’t eat another sweet potato! These are best the day you make them – afterwards they get sort of soggy.
