1 c. Butter or Margarine (softened)
1 1/2 c. Sugar
2 Eggs
1 tsp. Vanilla
2 3/4 c. Sifted Flour
1 tsp. Baking Soda

Directions:
Directions:
Beat butter, sugar, eggs and vanilla 2 minutes, using mixer at medium speed. Reduce speed to low. Add dry ingredients; beat until well mixed. Shape dough into 2 (8") rolls and wrap in waxed paper. Place rolls in plastic bag and seal. Chill rolls 4 hours or until firm. Refrigerate up to 1 week or freeze up to 3 months. Cut each roll into 1/4" - thick slices. (Let frozen rolls stand at room temperature a few minutes for easier slicing.) If you wish, dip one side of each slice in granulated or colored sugar. Place sugar side up, 2" apart, on ungreased baking sheets. Bake in 375º oven 10 minutes, or until lightly browned. Remove from baking sheets; cool on racks.
