4 eggs
1 1/ cup brown sugar, packed
3/4 cup vegetable oil
3 cups flour
1 1/2 tsp. baking soda
3/4 tsp. baking powder
3/4 tsp.salt
2 tsp. cinnamon
2 cups grated zucchini, unpeeled
1 cup coarsely chopped walnuts
1 tsp. vanilla

Directions:
Directions:
Beat eggs, gradually beat in sugar then oil.
Combine dry ingredients. Alternately stir in dry ingredients with zucchini into egg mixture. Stir in walnuts and vanilla.
Pour into greased and floured bread pans or tube pan. Bake at 350º for 50 minutes. Let stand 10 minutes and turn out onto cooling rack.
