1 pound Italian sausage
1 small onion- chopped
1 garlic cloves- minced
3 cans of beef broth (14 1/2 oz each)
1 (14 1/2 oz) can stewed tomatoes- cut up
1 (8oz) can tomato sauce
4 medium carrots- shredded
1 tsp. dried basil
1 tsp. dried oregano
1 (9oz) pkg of refrigerated cheese tortellini
1 small sliced zucchini
1/3 cup sliced green pepper
2 TBS minced parsley

Directions:
Directions:
Cook sausage and onions until no longer pink and onions tender.
Add garlic- cook and stir for two minutes.
Stir in broth, tomato, tomato sauce, carrots, basil, and oregano. Bring to a boil, reduce heat. Simmer uncovered for 30 min.
Gently stir in tortellini, zucchini, green pepper and parsley.
Cover and simmer 20-25 minutes.

Serve with grated Parmesan cheese.
