2 lbs. collard greens or turnip greens, washed and trimmed
1 ham hock or 6 slices of cooked bacon, chopped
2 tsp. salt
1 medium onion, chopped

Directions:
Directions:
Clean and wash greens well. Remove tough stems and chop. Place greens in a deep pot with onions. Add ham hock and salt. Put enough water in the pot to cover everything. Bring to a simmer over medium heat, cover and cook until greens are tender, about 1 hour.

Remove ham hock and tear off meat. Put meat back into the pot with the greens. If using bacon, dice it up and add it to the pot and cook until heated through.

Drain extra liquid and serve.
