2 ¾ cups flour
½ teaspoon baking soda
¼ teaspoon salt
1 cup quick oats (not instant)
1 cup brown sugar
½ cup white sugar
1 cup butter, softened
2 tablespoons honey
2 teaspoon pure vanilla extract
2 eggs
1 ½ cups raisins
½ cup chopped walnuts

Preheat oven to 300 degrees. In a medium bowl, combine flour, soda, salt and oats, set aside. In another bowl, blend sugars with mixer; add butter and mix to form a grainy paste. Scrape down sides of bowl, then add honey, vanilla and eggs. Mix at medium speed until light and fluffy. Add the flour mixture, raisins, and walnuts; blend at low speed just until combined. Do not overmix. Drop by rounded tablespoon onto ungreased cookie sheet 1 ½ inches apart . Bake 22-24 minutes (watch them) until light golden brown. Immediately transfer to cool surface.
