2 cups buttermilk
1 tsp. baking soda
2 cups plain white cornmeal
1 tsp. salt
1 tsp. sugar

Preheat oven to 450ºF. Grease an 8-inch cast-iron skillet and heat in the over while preparing the batter.

In a mixing bowl, beat eggs, add buttermilk and beat well. In another bowl, mix together dry ingredients. Add dry ingredients to buttermilk/egg mixture and beat until smooth.

Pour batter into hot skillet, return skillet to the over and bake for 20-25 minutes until browned on top.

Mary used bacon fat to grease the skillet. This is lots better than Jiffy Corn Bread mix!
