30 green tomatoes, sliced
20 onions, sliced
3/4 cup salt
1-1/2 quarts vinegar
3 cups sugar
1 tbsp. ground allspice
1 tbsp. black pepper
1 tbsp. cinnamon
1 tbsp. ground cloves
3 tbsp. whole mustard seeds
1 tbsp. celery seeds.

Mix together tomatoes, onions and sale in a large bowl and let stand overnight, then drain. In a large pot, cook tomatoes, onions, vinegar, sugar and spices for 20 minutes.

Ladle into hot, clean jars, screw on lids, and process to seal.

Aunt Dolly's recipe doesn't indicate how many jars of pickles this makes, so have plenty ready. You should process the filled jars in a hot water bath for 10 minutes for pints and 15 minutes for quarts (start timing when the water reaches a second boil after the jars are lowered into it). Remove the jars from the hot water with tongs, and set on a kitchen towel to cool. You should hear the lids "pop" as they are standing to cool. Test the seals of each jar by pressing on the lid. If it gives, the seal is not tight and you should put the jar in the fridge and use it within a few weeks.
