7-8 red potatoes
4 garlic cloves, peeled
3-4 tbsp. butter
1/4 c. sour cream
3-4 tbsp. milk (add more if you like them more thin and creamy)
1/2 tsp. salt
2 tbsp. parsley (optional)
2-3 tbsp. green onion, finely chopped (optional)
1/4 c. Parmesan cheese
1 c. cheddar cheese

Directions:
Directions:
Quarter potatoes and place in a large pot with some salted water. Add garlic and bring to a boil. Cover and reduce heat for about 20 minutes or until potatoes are tender. Drain well, then add butter, sour cream, milk, salt, parsley, and green onion. Mash to desired consistency (I like it a little chunky, so I only mash it until the ingredients are mixed in.) Stir in cheeses and serve immediately.
