1 6oz. package quick cooking long grain wild rice mix
2 cups chopped cooked chicken
1/2 cup dried cranberries
1 Granny Smith apple pealed and diced
1 medium carrot grated
1/3 cup white balsamic vinegar or red wine vinegar
4 tbsp. olive oil
1/4 tsp. salt
1/4 tsp. pepper
2 green onions
1 package (2.25oz.) sliced almonds, toasted

Cook rice according to package. Cool. Stir together chicken and next 8 ingredients and the rice. Chill 8 hours. Sprinkle with almonds just before serving

Serves 6
