Seeds from 1 or 2 pumpkins
~ 4 cups water
~ 1/4 cup salt
2 T. Oil or Melted Butter

Preheat oven to 375º. Place seeds in a colander and rinse well.

Bring water and salt to a boil in a medium pan. Add pumpkin seeds and return to a boil, simmer for one full minute. Cover pan with lid and remove from heat. Let soak for 10 - 20 minutes, then drain

In a large bowl, toss the seeds with the oil or butter and spread them in a single layer on a baking sheet. Bake in the oven, stirring occasionally, until browned and crisp, about 30 -40 minutes. Cool completely and store in an airtight container.

When you toss the seeds with the oil, there are many different seasonings you can try

chili power, seasoning salt, garlic powder, cayenne pepper, and soy sauce are a few.
