2 lbs. dried black eyed peas
2 small ham hocks
1 onion, chopped
6 cups water
1 tsp. salt
1 tsp. sugar
dash crushed red pepper

Directions:
Directions:
Rinse beans well and soak in cold water overnight. In a large, heavy pot, place ham hocks and water. Bring to a boil and simmer for about 1-1/2 hours. Add beans, onions, and seasonings, adding enough additional water to cover beans. Bring to a simmer, cover, and cook for about 2 hours, stirring and checking to make sure beans don't stick. When bean are tender, remove ham hocks and discard bone and fat, and dice meat into small pieces. Put back in pot with beans. Serve with hot cooked rice and corn bread.
