1 lb pork sausage
2/3 cup milk
1 oz. can cream of chicken (or mushroom soup)
4 eggs, slightly beaten
1 cup shredded Velveeta cheese
1 cup Southern style hashbrowns
2/3 cup cornflake crumbs
3/4 cup shredded mild cheddar cheese

Directions:

Preheat oven to 350º.

Brown sausage in skillet, stirring until crumbly; drain. Combine milk, soup, eggs, Velveeta, sausage and potatoes in bowl. Mix well. Spoon into greased 9" x 13" glass baking dish. Sprinkle with cornflake crumbs and cheddar cheese. Bake, covered, for 20 minutes. Remove cover and bake an additional 10 to 20 minutes, or until set in the center. Let stand 5 - 10 minutes before serving.

May refrigerate overnight before baking - increase baking time 5 - 10 minutes.
