"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
4 to 6 chicken breast or 1 whole chicken
1 package of flour tortillas
salt and pepper

Directions:
Directions:
Place chicken in a large stock pot and cover with water. Boil the chicken until it just falls off the bone. If the water boils away add enough to just cover the chicken. Remove the chicken from the broth and cool. Remove all the bones and tear up the chicken into bite size pieces. Cut the tortillas into strips about 1" wide like dumplings. Bring your broth back to a boil and begin layering your tortilla strips and chicken in the broth. Add salt and pepper. Simmer on low for a few minutes and then turn off the heat and cover the pot with a lid until ready to serve. Make sure the mixture does not stick but refrain from stirring too much as it will become gummy!
