1 lb. ground sirloin or very lean ground beef
1/2 c. fine bread crumbs
1/4 c. milk
1/2 envelope (1-1/2 T.) dry onion soup mix
1 package (1oz.) demi glace mix or au jus mix
1-1/4 c. water (can substitute canned gravy for mix and water)

Combine beef, bread crumbs, milk, and soup mix. Mix well and shape into four patties, each about 1/2" thick. Cook uncovered in nonstick skillet over medium heat for about 5 minutes on first side. Reduce heat if patties brown too quickly. Turn patties over, cover and cook for 5 minutes. Uncover skillet, reduce heat to low and add prepared gravy mix or canned gravy. Cook 5 minutes or until gravy reaches desired consistency and the patties are no longer pink in the center.
