2 egg whites
1/2 cup sugar
1/4 tsp. vanilla extract
3 T. butter or margarine, melted
3 T. flour
1/2 cup blanched almonds

Directions:
Directions:
Preheat oven to 400º. Spray large cookie sheet with non-stick cooking spray.

In medium bowl, combine egg whites, sugar and vanilla; beat with wire whisk about 2 minutes or until sugar is dissolved and mixture is syrupy.

Drop by teaspoonful, about 4 inches apart, onto prepared cookie sheet. With small spatula, spread each to a 3 inch circle. (Make no more than 8 at a time)

Bake 4 to 5 minutes or until cookies are golden brown around edge and lightly browned in center.

Immediately with small spatula, remove cookies carefully, and place over rolling pin, to curve them. (If cookies get too cool, return to oven just until hot and soft again.)

Repeat with remaining batter, spraying cookie sheet with non-stick spray each time.
