3 c. Bisquick baking mix
2/3 c. sugar
2 eggs
1/2 c. milk
1 c. mashed bananas (about 2 medium)
2/3 c. chopped nuts

Directions:
Heat oven to 350º. Grease and flour loaf pan, 9x5x3 inches. Mix all ingredients until moistened; stir vigorously 30 seconds. Pour batter into pan. Bake 55 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely before slicing. Makes 1 loaf.

Pumpkin-Nut Bread: Substitute 1 c. canned pumpkin for the bananas. Beat in 1 tsp. ground cinnamon, 1 tsp. ground nutmeg and 1/2 tsp. ground cloves.

Date Nut Bread: Mix 1 1/2 c. cut-up dates and 1/2 c. boiling water; cool. Substitute date mixture for bananas.
