7# pork roast, boned & de-fatted
1 T Kosher salt
1 T black pepper
1 T garlic powder
1 T paprika
1/4 cup cider vinegar

Directions:
Directions:
Rub pork liberally with spices. Place pork in roasting pan and add cider vinegar. Cover pan tightly and roast at 325º 4-5 hours or until pork reaches 185º. Reserve pan liquids. Cut pork coarsely or shred with hands. Use reserved pan drippings to reheat pork.
