1 c. raw rice
Bring 2 qts of water to a boil, add rice. When water returns to boil, adjust heat and simmer 10-12 minutes until rice is firm. Drain and rinse.

DRESSING:
1 T. Dijon mustard
1/2 t. season salt
2 t. red wine vinegar
6 T. olive oil

1/2 c. fine diced Swiss Cheese
1/4 c. black pitted olives sliced
3 T. dill pickles
2 c. diced cooked chicken breast

Directions:
Directions:
Combine mustard, salt, vinegar together, add oil and blend well. Add rice, toss with dressing. Add remaining ingredients, serve cool but not cold.
