1/2 c warm water
2 pkg dry yeast
1/4 c sugar
2 tsp salt
3 1/2 c warm liquid(water, milk, potato water)
1/4 c shortening
11-12 c sifted flour

Directions:
Directions:
Soak: yeast in 1/2 c water for 5 min.
Combine:liquid with sugar and salt; stir until dissovled
Beat in: 4 c flour, yeast mixture and shortening
with rotary beater until smooth
Add: remaining flour, mixing with spoon until dough leaves sides of bowl. Turn out on lightly floured board. Knead: thoroughly adding flour as necessary until dough becomes smooth and elastic; no longer sticky. place in lightly greased bowl, grease top of dough. Cover. Let rise in a warm place util doubled (1 1/2 hr) Punch down and let rise again until nearly double. Divide in 4 equal parts; Shape and place in a greased loaf pans; cover; let rise in warm place until reaches top 1 to 11/2 hour; Bake at 400 for 45 minutes cool on rack Makes 4 loaves.
