6 lamb shanks
¼ cup butter
¼ cup margarine
2 large onions thinly sliced
¾ cup dry white wine
¾ cup tomato juice
1/3 cup fresh mint or ¼ cup mint jelly
1 ½ tsp paprika
1 ½ tsp ground ginger
1 ½ tsp salt
¾ tsp ground pepper
1 ½ cup chicken stock

Directions:
Directions:
Remove fat from shanks. Melt butter and margarine in heavy Dutch oven or skillet. Brown shanks well; place in roasting pan. Sauté onions in same butter; add remaining ingredients, except flour, in order given. Cook and stir for 5 minutes. Pour over shanks. Cover and bake at 250 for to hours or until meat pulls away from the bone. Skim fat from liquid. Thicken using 1 T flour per cup of liquid.
