1 - 1 1/2 pounds carrots
1/4 cup water, reserved from cooking carrots
2 tbsp grated onion and juice
1 tbsp prepared horseradish
1/2 cup mayonnaise
1/4 cup grated cheddar cheese
1/2 tsp salt
1/4 tsp pepper
1 cup fine, dry bread crumbs
1/4 cup butter, melted
1 tsp paprika

Directions:
Directions:
Slice carrots and cook for 5 minutes in a small amount of water. Drain, reserving water for sauce. Combine cooking water, onion and juice, horseradish, mayonnaise, cheese, salt and pepper. Add carrots and place all in casserole dish. Combine bread crumbs, melted butter and paprika; sprinkle over carrot mixture. Bake at 350º for 20 minutes.
