1 small onion, chopped
1/2 lb. ground pork, sausage, or beef
2 c. shredded potatoes
3/4 tsp. salt, divided
6 eggs
1/4 c. milk
1/8 tsp. pepper
Dash of cayenne pepper

Directions:
Cook sausage and onion in 2 qt. casserole in microwave 3 1/2 to 5 minutes or until no longer pink, stirring once or twice. Remove sausage and onion to plate covered with paper towels. Discard all but 1 T. fat from casserole dish. Add potatoes. Cover. Microwave 4-6 minutes or until tender. Sprinkle 1/4 tsp. salt over potatoes and stir. Combine eggs, 1/2 tsp. salt, pepper, cayenne, and milk. Pour over potatoes. Sprinkle with meat. Microwave uncovered 3 minutes. (Lift edges with spatula so uncooked portion spreads evenly, taking care not to disrupt potatoes.) Reduce power to 50%. Microwave 8-14 minutes or until eggs are almost set, rotating dish twice during cooking. Let stand loosely tented with foil 2 minutes before serving.
