Italian Meatloaf Recipe

2 ½ pounds ground beef
1 cup cracker crumbs
2 8oz cans tomato sauce
¾ tsp oregano
2 cups mozzarella cheese, shredded
1 egg
¼ cup Parmesan cheese
½ cup chopped onion
1 ½ tsp salt
¼ tsp pepper

Directions:
Directions:
Mix everything, except one 8oz can of tomato sauce and the mozzarella cheese (easiest to mix with your hands). Mix and shape into a 10x12 inch rectangle on waxed paper. Sprinkle the mozzarella cheese over the meat mixture. Roll like a jelly roll and press the edges together. Place in a shallow dish (or a loaf pan). Bake at 350 for 1 hour. Pour remaining tomato sauce over the top and bake 15 more minutes. Serves 6.

Notes: Tina uses a blend of gouda and blue cheese instead of mozzarella.
