3/4 cup all-purpose flour
3/4 cup whole wheat flour
3/4 cup white sugar
1/4 cup oat bran
1/4 cup quick cooking oats
1/4 cup wheat germ
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 cup blueberries
1/2 cup chopped walnuts
1 mashed banana
1 cup butter milk
1 egg
1 Tbls. vegetable oil
1 tsp. vanilla extract

Preheat the oven to 350º F. Grease a 12 cup muffin pan or line with paper muffin cups.
In a large bowl, stir together he all-purpose flour, whole wheat flour, sugar, oat bran, quick-cooking oat, wheat germ, baking powder, baking soda and salt. Gently stir in the blueberries and walnuts.
In a separate bowl, mix together the mashed banana, buttermilk, egg oil and vanilla. Pour the wet ingredients into the dry. Mix just until blended. Spoon into muffin cups, filling all the way to the top.
Bake for 15-18 minutes or until the tops of the muffins spring back when lightly touched.

Recommended Substitutions:
Ground Flax seed can replace oat bran
Use all wheat flour instead of all-purpose (I like)
1/2 cup of brown sugar replaces the white sugar (I like)
Replace half the milk with light sour cream
Increase the flour to 1 cup and the quick oats to 3/4 cup in place of the the wheat germ and oat bran.
Other fruit can replace the blueberries. My husband and kids prefer the apples with a little bit of cinnamon added.

***Needs to be stored in the freezer or refrigerator. When ready to eat can stick in microwave for 10-15 seconds.
***I usually make at least 2 batches since the ingredients are out.
