2 eggs
1/2 c. milk
2 c. flour
1/4 c. cornmeal
1 tsp. paprika
dash of salt
8 walleye fillets
Crisco shortening or oil

Directions:
Directions:
Divide flour into 2 pans. In one portion of flour, mix cornmeal, paprika and salt. Whip eggs and add milk. Dip walleye fillets first in plain flour, then in egg wash, again in flour, then in flour-cornmeal mix. Fry in hot shortening until golden brown. Add a touch of butter for better browning.
