3 1/2 pound chicken or parts
2 stalks celery
1 onion, peeled and quartered
2 bay leaves
2 cups milk
1/4 cup butter
salt & pepper
Dumplings (pie crust, biscuits or flour tortillas)

Directions:
Directions:
Boil chicken with celery, onion and bay leaves until cooked and falling off the bones. Remove chicken, debone and skin and cut into bite size pieces. Set aside. Save 2 cups or more of broth.
I like totillas cut into strips but biscuits are OK if you roll them thin and cut into strips. Heat the broth milk and butter and add dumplings. Cook for about 10 to 15 minutes and add back the chicken. Continue until chicken is hot, I f not enough gravy or too thin for you, you can always add more liquid or thicken with Wondra flour.
