4 catfish fillets (6oz)
salt and pepper
1/2 cup flour
1/4 cup oil
4 tbsp butter
1 cup sliced fresh mushrooms
1/2 cup chopped green onions
2 minced clove garlic
2 medium tomatoes, peeled, drained and diced
1/2 cup white wine
cayenne pepper
2 tbsp chopped parsley
Directions:

Season the fillets with salt and pepper and dust with flour. Saute fillets in oil in a large skillet over medium high heat fro 3 to 6 minutes per side or until golden brown. Remove from pan and keep warm.
Make sauce in a clean skillet by melting butter and sautéing the mushrooms until they begin to brown, about 3 to 4 minutes. Add garlic and saute another minute. Add tomatoes and saute 30 seconds. Add wine and cook another two minutes. Season with cayenne and add parsley. Serve over fillets.

I think I like this better than "Diane." You may prefer coarse black pepper to cayenne. I like to use a very dry white wine slightly diluted with water. Also any white fish fillets are good.
