5 or 6 Mahi Mahi filets
1 1/2 c Japanese Bread Crumbs
1/2 c Parmesan cheese shredded
1 c milk or butter milk
salt and pepper to taste

Directions:
Directions:
Mix bread crumbs, Parmesan together in flat pan. In another pan pour milk (or buttermilk).

Dredge fish fillets in milk first, then bread crumb mixture. Dredge a second time in milk and again in bread crumb mixture. Making sure you coat both sides well.

Place on cooking sheet spread lightly with non stick spray. Bake in preheated 350º oven for about 25 minutes turning over once during baking time.

Season immediately upon baking.

Serve with wild rice and MANGO SALSA.

I went to a restaurant for my birthday and had a dish similar, I tried to duplicate it and this is what I came up with...not exact, but very close to the original recipe! Ooh so good.
Try the MANGO SALSA within this cookbook as a sauce for the top of this dish!
