2 lb beef chuck, cut into ½ inch cubes
2 to 4 Tbsp. olive oil
6 fresh jalapeño peppers, chopped
1 large onion, chopped
1 clove garlic, chopped
1 green pepper, chopped
8 medium tomatoes, chopped
1 (8 oz.) can tomato sauce
1 can beef broth
2 cans red kidney beans
1 Tbsp. paprika
2 tsp. cumin
1 tsp. sweet basil
1 tsp. salt or to taste
1 tsp. black pepper or to taste.

Brown beef in hot oil in a large heavy pot. Add jalapeño peppers, onion, garlic and green pepper; saute with beef. Add paprika, cumin, basil and black pepper, blend flavors. Add beef broth, tomato sauce and tomatoes. Bring to a boil. Reduce heat, cover and simmer for about 2 hours, stirring occasionally. Smash tomatoes as they begin to get tender. After about 2 hours add red kidney beans (including juice) and salt. Continue to simmer for about 45 minutes
