1 - 12 oz. tomato juice
2 c heavy cream
1 - 24 oz. diced tomato
2 tbsp garlic minced
1/2 c fresh basil
1 tsp salt
1 tsp ground white pepper
1 tbsp minced shallot
1/2 c honey
1 tbsp butter

Directions:
Directions:
Saute garlic and shallots in butter until tender and fragrant. Add diced tomatoes, tomato juice, salt, pepper, and honey. Bring to a boil, then reduce to simmer for about 20 minutes. Add cream and simmer another 30 minutes. Add basil and puree with immersion blender or in small batches in a regular blender. Makes 3 quarts of soup.
