1 cup shortening
2 cups sugar
4 eggs
5 large ripe bananas, mashed
3 1/2 cups flour
2 teaspoons soda
1 teaspoon salt
1 cup chopped nuts (optional)

Directions:
Directions:
In a large bowl cram together the shortening and sugar until fluffy; add eggs and beat well. Blend in mashed bananas. Stir in sifted dry ingredients into creamed mixture along with nuts if desired. Bake in 2 well greased loaf pans that have been dusted with sugar. Sprinkle a little sugar on top of the batter in the loaf pan before putting in the oven. Bake at 300º for 75 minutes or until toothpick comes out clean.
