2 cups flour
1 3/4 cups sugar
1/2 tsp salt
2 tsp baking soda
1 tsp cinnamon
1/2 cup chopped pecans
2/3 cup oil
1 cup buttermilk
1 cup Hollywood carrot juice
1 can drained crushed pineapple (8oz)
---------- FROSTING-------
1 package softened cream cheese (8oz)
1/2 cup powered sugar
2 tbsp carrot juice

Directions:

Grease and flour a 9x13 inch pan. Combine and mix flour, sugar, salt, baking soda, baking powder and cinnamon. Add oil and buttermilk and mix well with mixer for 2 minutes. Heat carrot juice until almost boiling, add to batter and mix with mixture for 2 minutes. Fold in pineapple and pecans. Pour into pan and bake in 350 F oven for 40 minutes. Cool. Combine Frosting by mixing well and frost.
