"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Directions:
Mix cream cheese with sugar and flour. Add well beaten egg yolks and flavoring. Mix well, then add cream (not whipped) and mix well. Add stiffly beaten egg whites and fold into mixture. Pour over vanilla wafer crust and bake at 350 degrees (or 325) until done. (When inside is no longer squiggly, insert case knife and see if comes out clean; if not, let bake a little longer.)
For crust: Mix wafer crumbs with melted butter in pie pan, bringing up sides to form a crust.
Strawberry glaze or topping: Mix together 1 pkg. (8 or 10 oz.) frozen strawberries with 1 tbsp. flour or cornstarch and cook til thickened. I usually add tiny drop of red food coloring. Pour on cooled pie or shortly before serving.
