1 ¼ cup buttermilk baking mix
9 eggs
2 cup milk or 1/2 and 1/2 for a richer dish
additional milk may be needed
1 ½ tsp. salt
½ tsp. pepper
½ tsp. dried oregano leaves
any other fresh herb or spice which you enjoy (basil, garlic)

2 cups shredded cheese (Parmesan, mozzarella or cheddar or combination of)
2 medium tomatoes, chopped
small box frozen chopped spinach (thawed) or ½ large bag fresh spinach leaves, cooked until slightly wilted
1 cup sliced mushrooms
½ cup sliced green onions (with tops)
½ cup chopped parsley

Optional additions:
Diced ham
Cooked & drained sausage (your favorite pork, turkey or chicken)
Crab or Shrimp meat
Diced zucchini
Diced artichoke hearts
Chopped Broccoli flowerettes
Red or green peppers – diced
Diced Onion

The following is the basic recipe for a wonderful frittata. You may create your own mixture of favorite ingredients but the base should remain the same. Additional milk may be necessary if the final mix contains too much filling and not enough liquid. I sometimes add up to another cup of milk depending on how many vegetables and how much cheese I have used. All the ingredients should be fairly well coated and swimming a bit in the liquid mixture so that when it bakes it has somewhat of an omelet texture around the ingredients.

Mix the baking mix, eggs, milk and spices together in a large bowl. In 13x9x2 greased baking dish, layer ingredients you wish to use. Pour the egg mixture over the ingredients in baking dish and mix together with spoon or hands. The mixture should be somewhat liquid and you may wish to add a bit more milk at this point – mixing in with the rest. Bake in 350 degree oven until golden brown and set, about 30 minutes. It may puff up slightly and then fall a bit when cooling. Cut into squares and serve with salsa or hollandaise sauce for an extra treat.
