Judy's Beef Tenderloin Recipe

4-6# beef tenderloin
½ C Soy sauce
2-3 large garlic cloves
1 T Rosemary
1 tsp Oregano
½ C chopped parsley
½ C olive oil
1 T thyme
1 T dry Mustard

Directions:
Directions:
Mix all ingredients and pour over beef in a Ziploc bag. Marinate in fridge for many hours (overnight if possible)
Preheat oven to 450° – place beef in glass baking dish. Bake for 10 minutes, and decrease to 350°. Cook for 30-40 minutes and check w/ meat thermometer. Don’t let internal temp rise above 140°.
To serve hot: remove from oven and slice, serve immediately.
For sandwiches: upon removing from oven, put in metal pan and into fridge immediately. Slice prior to serving. Good with hard rolls, horseradish mayo.
To grill: preheat grill to medium. Cook 12 minutes on first side and 10 minutes on second side. Remove and let sit for a couple minutes prior to slicing.
