Combine – 12oz natural Swiss cheese (grated)
4oz natural or processed Gruyere
with 1 ½ tsp cornstarch
Rub inside of heavy sauce pan with 1 clove garlic, halved, discard garlic.
Pour in 1 C Sauterne wine and 1 T lemon juice.

Warm til air bubbles rise and cover surface. Do not boil. Stirring vigorously, keeping heat at medium, add cheese 1 handful at a time, melting thoroughly. When cheese is melted and bubbling, add dash of nutmeg and dash of pepper. Transfer to fondue pot. If it becomes too thick, add warmed wine.
Suggested dippers: French bread, ham, veggie bites
