1-1/2 cups cooked white rice
2 tbsp. finely chopped onion
3 tbsp. butter
1/2 cup chopped parsley
1 cup milk
1 tsp. salt
1 tsp. Worcestershire sauce
1 cup grated cheese
2 eggs, slightly beaten

Directions:

In a small skillet, saute onion in the butter. In a large bowl, mix cooked rice and parsley. Add milk, salt, onions, cheese, and eggs. Mix thoroughly. Pour into a buttered baking dish. Bake at 350ºF for about 40 minutes.

As I recall, we never liked this as kids. Maybe we would like it now! The recipe doesn't indicate what kind of cheese to use -- but since it's grated cheese, it's probably grated Parmesan. I remember the casserole being white and green -- no orange cheese -- so try it with the Parmesan and see how it tastes.
