3/4 cup butter
1 cup sugar
2 eggs
1 tsp baking powder
1/2 tsp salt
1 tsp vanilla
1 cup mashed carrots
2 cups flour
*1 cup nuts or 1/2 cup coconut (optional)

Directions:
Directions:
Cream butter and sugar together, then add 1 of the eggs; mix well. Next add the baking powder, salt, vanilla, carrots and flour. When mixed add the other egg. Add the nuts or coconut if you would like. Drop on greased cookie sheet for 375º for 15 min.
Frost cookies while warm with icing.

Icing:
1 orange peel grated
3 tsp orange juice (from the grated orange)
1 cup powdered sugar
pinch of salt
